Ingredients
- 360g pasta
- 1 garlic clove
- extra virgin olive oil
- 2 red peppers
- 60g walnuts
- pinch salt
- 1 red onion
- 50g cheese
Methods
- Chop your onion and peppers.
- In a pan over medium low heat, sizzle onion with olive oil for a couple of minutes.
- Add peppers, season with a pinch of salt and add one ladleful of boiling water.
- Cover with a lid and cook for 10-15 mins or until soften. Stir occasionally.
- In a blender, add cooked peppers, garlic clove, walnuts, Parmigiano cheese and a drizzle of olive oil. Mix until creamy.
- In the meantime, boil your pasta in some salted water until al dente, drain and mix it with you pasta water, adding some pasta water to make it sexy!
